Ice cream sandwiches are above all, my favorite way to enjoy ice cream. However for this year’s National Ice Cream Day I decided to see if I could elevate the humble vanilla and chocolate ice cream sandwich by making an Ice Cream Sandwich Cake. I succeeded! The world will never be the same.

Ice cream Sandwich Cake Ingredients

  • 11 basic vanilla ice cream sandwiches
  • whipped topping (like cool whip)
  • chocolate sauce
  • peanut butter sauce

I was hoping I could find a ready-made peanut butter sauce at the grocery store. Nope! no luck. Why is this not a thing. So I had to make my own.

Peanut Butter Sauce Ingredients

  • peanut butter, smooth
  • sweetened condensed milk
  • water
  • vanilla extract

Makin’ Sauce

Let’s start with the peanut butter sauce.

It’s actually really easy

In a heavy-bottomed pot, over medium heat, melt peanut butter and sweetened condensed milk together with a pinch of salt.

Add in water and mix until fully smooth. Finish by stirring in vanilla. It may seem a bit thin, but it will tighten up a bit as it cools.

Let’s Make an Ice Cream Sandwich Cake

Line the bottom of an 8×8 pan with plastic wrap. Make sure the plastic hangs over the edges of the pan. This will make it easier to transfer the frozen cake to a serving platter if you decide to serve it all at once.

Spread a thin layer of whipped topping on the bottom of the pan then place a layer of about 6 sandwiches on top. I had to cut one sandwich about in half to get a good fit.

Spread half of the remaining whipped cream on top and then drizzle a thin layer of peanut butter and chocolate sauce.

Place the remaining sandwiches on top and spread the whipped cream over. Make alternate lines of peanut butter and chocolate sauce. Gently drag a toothpick in opposite directions to create the design. Freeze uncovered for at least 3 hours to properly ‘set’ the cake.

  • 1 cup sweetened condensed milk
  • 1/4 cup water
