Hey everyone! Nicole here. If you’re doing Keto or at least trying to cut back on carbs like me, then you miss breaded chicken tenders. The hubby and I found a way for me to have breaded chicken without all the carbs! So today I’m sharing with you my version of the Keto-friendly Almond Breaded Chicken Tenders. We’re gonna spice these guys up a tad so that they do not turn out bland, like most almond breaded stuff usually is, in my opinion.

Start out with boneless skinless chicken breasts or already cut into tenders chicken pieces. You may use skin-on chicken breasts, this is a preference. You’ll need 2 eggs and your choice of seasonings. We used paprika, cumin, oregano, salt, and pepper. You can use turmeric instead of paprika for a slightly different flavor and color.

Ingredients for Almond Breaded Chicken Tenders

  • 2 cups Almond flour
  • 1 tablespoon paprika (or Turmeric go with whatever color makes you happy)
  • 2 tsp cumin
  • 1 tsp oregano
  • salt and pepper to taste
  • 2 eggs
  • 2 chicken breasts cut into tenders

Breading The Chicken Tenders

Crack your eggs and whisk them together.

In a separate bowl, you want to add your almond flour and add your seasonings mix and stir well. Using a zipper locking bag or any clear bag you have to shake the breading mix and get it all evenly distributed.

Taking A Bath In Eggs

Next, take a piece of your chicken and dip it in the uncooked egg.

Then put it in the bag and either shake or turn the chicken until it is coated in breading.

Lay this flat onto a greased sheet, or air fryer rack. Once all pieces have been coated and laid out, you’re ready to put them in the air fryer.

Set your air fryer for 30 min at 400. Ours has a method as well, and we select Wings from the menu of options. When the timer is done, check the internal temperature of your thickest chicken piece to ensure that you reached a high enough temperature internally for the chicken to be safe to eat.

Almond Breaded Chicken Tenders in the Air Fryer

Equipment

  • Air Fryer
  • Zip Top Bag
  • Bowl

Ingredients
  

  • 2 Chicken Breasts
  • 2 Eggs
  • 2 Cups Almond Flour
  • 1 Tbsp Paprika (or Turmeric)
  • 2 Tsp Oregano
  • Salt and Pepper to taste

Instructions
 

  • I used chicken breasts, so first I cut them into tenders. You can buy already cut tenders, you'll need 6 of them.
  • In a bowl or add them directly to your zip-locking bag, mix all the dry ingredients.
  • Whisk your eggs together and place in a dish so you can lay the chicken in and coat it with egg.
  • Place coated chicken into the bag and let dry ingredients stick to your chicken.
  • Lay chicken flat and place in the air fryer.
  • Set your air fryer to 400 for 30 min.
