This week I am sharing my Easy Udon Noodle Soup for the soul! You can make this udon noodle soup in an Instant Pot or on the stove top it is up to you!

What You’re Going to Need

This is a great winter warm-up dish filled with plenty of flavor and tastes from around the world. I was inspired to make this fusion dish by my nephew. He is currently located in Japan on an international teaching job. Since he is bilingual he is teaching elementary school students English. He has been stuck overseas for the past 2 years because of the Covid lockdown. We have been Zoom calling and sharing great recipes, which I am now going to share with you.

Easy Udon Noodle Soup Ingredients

Fresh Cut Veggies

While he has access to many great ingredients I paired this down to basics. We can easily find these ingredients here in the U.S. for our udon noodle soup. You will want to use fresh garlic and ginger, that is key. I have chosen to add carrots, scallion, and spinach as well.

Air Fry The Chicken Breast

Season the chicken breast and sear them in your air fryer at 390 degrees for 20- 25 minutes. This cook time will depend on the thickness of the breast. You will also be turning them halfway through the cooking time so set your timer. For a little extra flavor, roast my sliced carrots by adding them in for the last 5-7 minutes of cooking.

Boiling Noodles

Also, pre-cook your udon noodle for 2 minutes in a pot of boiling water. You can also use a thick-cut ramen noodle or even a soba noodle in place of the udon noodle. They are both delicious in this recipe, thus they can interchangeable if you like. You may wish to tossed an egg into the pot at the same time for a soft-cooked hard-boiled egg to add to the top of my dish.

Making The Broth

Make the broth by starting to lightly brown the garlic and ginger with 2 tbsp of sesame oil in the bottom of the stockpot. Add in 7 cups of stock of your choice, Tamari/soy sauce, red chili flakes, and 2 tbsp knorr chicken seasoning. Bring to a boil. Then add-in your scallions, carrots, and sliced chicken. Add in you precooked noodles and spinach, top with french fried onions, sesame seeds, and soft boiled egg halves

Differences between Soba, Udon, and Ramen are what the noodle is made of: Soba noodles are made of buckwheat, while Ramen and Udon are made of wheat flour. Another difference between Ramen and Udon is that Udon is cut into thick pieces and is chewy while Ramen is thinner.

Easy Udon Noodle Soup

Ingredients
  

  • 1 lb Chicken Breast
  • 12 oz Noodles Udon, Ramen or Soba
  • 4 Minced Garlic cloves
  • 1 Thumb Ginger
  • 2 Sliced Scallions
  • 4 large carrots
  • 6 oz fresh spinach
  • 7 cups stock Chicken stock is best
  • 4 tbsp soy sauce
  • 4 tbsp tamari or more soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp chicken bouillon
  • 1 tbsp sesame seeds
  • 1 tsp red chili flakes

Optional

  • 2-4 eggs soft boiled, garnish

Instructions
 

  • Season your chicken breast and roast them in your Air Fryer at 390 degrees for 20- 25 minutes depending on the thickness of the breast.
  • You will also be turning them halfway through the cooking time so set your timer. For a little extra flavor, you can also roast your sliced carrots by adding them in for the last 5-7 minutes of cooking.
  • precook, you udon noodle for 2 minutes in a pot of boiling water. I also tossed an egg into the pot at the same time for a soft-cooked hard-boiled egg to add to the top of my dish.
