Instant Pot Mediterranean Egg Sandwich is a great breakfast sandwich packed full of flavor. Hey there friends, it’s Jennifer from JENRON DESIGNS, and I am so excited to share this tasty breakfast recipe with you all today. It is my Instant Pot Mediterranean Egg Sandwich.

Hey Y’all, today I am using the fun little accessory I got for my Instant Pot. It’s from our very own Debbiedoo’s Home Pressure Cooking line my flower bundt pan. Instant Pot Mediterranean Egg Sandwich is a great recipe for those egg lovers with an exotic pallet.

Ingredients

You only need a few simple ingredients to make this savory, and delicious Mediterranean-style egg dish. Whisk your eggs with salt, pepper half and half, and herbs just like making a basic scrambled egg mixture. I do recommend using an aerosol olive oil cooking spray to grease the flower bundt pan for easy removal, prior to adding the egg batter, you can also use a butter or coconut spray as well.

Fill the Flower Pan

Fill your greased flower bundt pan with feta cheese and sliced veggies. Pour egg mixture into your flower pan over the top of the veggies, it should be just below the edge of your pan. Place cooking trivet and 1 cup of water in the base of my Instant Pot and cook at High-Pressure Manual Cook for 15 minutes, then I do a quick-release on the steam and serve it hot.

While the eggs are baking, I cook the biscuits in the oven, according to package directions since they take 10-12 minutes it times out perfectly. Then I work on the optional Feta Sauce, for garnishing, recipe below.

Easy Feta Sauce

EASY FETA SAUCE- mix 1/2 cup of greek yogurt with 1/2 cup of sour cream, stir in 3 oz of Feta Cheese, 1 tbsp of water, salt, and pepper to taste.

I remove the flower bundt pan with rubber-lined tongs, for extra grip. Then using oven mitts I invert the bundt pan onto a plate and sprinkle eggs with mozzarella cheese then top with sliced tomato halves. Then I added some fresh herbs like parsley and chives to dress the plate and served with fresh biscuits.

Making Egg Sandwiches

To make the egg sandwich slice the egg ring into quarters, then half the quarters. Place one to two slices on each biscuit you can add the feta sauce for a little zip as a garnish.

Note: If you plan on taking the biscuit as a morning “grab and go”, try a nice slice of smoked provolone.

Ingredients
  

  • 6 Eggs
  • 1 pint Cherry Tomatoes Sliced, (save a few halves to garnish)
  • 1/2 cup Green Pepper diced
  • 1/4 cup Onion diced
  • 6 oz Feta 3 oz for eggs, 3 oz for sauce
  • 3 oz Mozzarella Shredded Garnish
  • 1 tbsp Italian Seasoning
  • 1 tsp black pepper
  • 1 tsp Penzeys Seasoned Salt
  • 1 can Refrigerated Biscuit Flaky Layers is what is pictured
  • 1/2 cup sour cream Feta sauce only
  • 1/2 cup greek yogurt Feta sauce only

Instructions
