
Instant Pot Strawberry Compote

The most common choices are fruit compote such as strawberry and blueberry. But what if you don’t have access to ready-to-use compote? Or the store ran out? The great news is that it is so easy to make your own! Today, we will be sharing a recipe of Instant Pot Strawberry Compote that will go so well not only with your cheesecake, but also with ice cream, yogurt, waffles, pancakes, and more!
How to Make It
Making your own Instant Pot Strawberry Compote is so fast and easy!
First, you will need about 500g of fresh strawberries that have been rinsed. Trim off the tops using a sharp knife. If you want to chop some of the pieces, feel free to do so.

Put the strawberries inside the stainless bowl of your Instant Pot. Add in some freshly squeezed lemon juice, a bit of salt, some pure honey, vanilla extract, and a bit of lemon zest.

Seal the lid and Pressure Cook on High for just one minute. After, do a natural release for ten minutes. Note that the metal pin will drop at around seven or eight minutes. Do not open the lid still until the ten minutes are up.
Once done, open the lid, click Cancel, and select the Saute option. Choose Medium heat and stir and break up some of the strawberries with the use of a wooden spoon. Give it a taste and adjust the sweetness by adding more sugar. Add in only one tablespoon at a time and taste it after every addition until your desired sweetness is achieved.
Do not worry if your Instant Pot Strawberry Compote still looks a bit runny at this point. It will still thicken as it cools down. Once completely cool, transfer it to a mason jar or an airtight container. It will keep in the refrigerator for up to twelve days.

Where Can You Use Instant Pot Strawberry Compote?

This Instant Pot Strawberry Compote will go extremely well with:
Desserts: cheesecake, ice cream, as filling for cakes, Danish pastries, as a cake topping, etc.
Breakfast: crepes, bread, scones, yogurt, French toast, waffles, pancakes, etc.

Ingredients
- 1-1.5 lb fresh strawberries
- 2 to 5 tbsp white sugar
- 1/8 tsp salt
- 2 tbsp pure honey
- 2 tbsp lemon juice freshly squeezed
- 1 tsp lemon zest freshly grated
- 1 tsp vanilla extract
Instructions
