Instant Pot Homemade Banana Bread

Hi there, Paulina here today making quick and easy Instant Pot Homemade Banana Bread. Bananas are cheap and very common among households and it is no surprise that there will always be a presence of overripe bananas that would normally just go to waste. What better way to utilize those overripe bananas than by making this very easy and delicious Instant Pot Banana Bread!

The thing about the Instant Pot is that it cooks food basically by steaming it, which is exactly why a loaf of banana bread cooked in an Instant Pot is guaranteed to be super tender, moist, and flavorful.

Although it probably would take just as long as it would if you baked it in an oven, the results would blow you away!

What You’ll Need

The ingredients for this Instant Pot Banana Bread are found in any pantry, and the process is straightforward!

You will need a medium-sized loaf pan (roughly 7 3/4 x 3 3/4 inches in size). A larger loaf pan will no longer fit a 6-Quart Instant Pot. You can find this size loaf pan in our superior bundle set by Home Pressure Cooking.

Spray with cooking spray or brush it with oil.

Place the trivet inside the Instant Pot and pour 1 cup of water.

Meanwhile, in a large mixing bowl, beat the melted butter and brown sugar together until combined. Add in the eggs, vanilla extract, and mashed bananas and continue mixing until well-combined.

Then, using a spatula, stir in the dry ingredients until just incorporated. Do not overmix. Overmixing will result in excess gluten production, resulting in a tough loaf of bread.

Pour the batter into your prepared loaf pan and cover it with aluminum foil. Place the covered loaf pan on top of the trivet carefully.

Seal the lid of the Instant Pot and Pressure Cook on High for 60 minutes. Once done, allow to release pressure naturally for 10 minutes, before doing a quick release.

Remove the loaf pan from the Instant Pot, remove the aluminum foil, and allow it to cool completely.

Banana Bread Flavor Ideas

The recipe below is for plain Instant Pot Banana Bread. But you can definitely modify it to make different flavors! Some ideas are:

Instant Pot Banana Chocolate Chip Bread – Just add 1/2 cup of chocolate chips into the batter and a bit more for topping before cooking.

Just add 1/2 cup of chopped walnuts or your choice of nuts (e.g. pecans) into the batter and a bit more for topping before cooking.

Instant Pot Banana Cream Cheese Bread

Just beat together 4 oz of cream cheese, 1/4 cup of sugar, 1 egg, and 3 tablespoons of flour to make the cream cheese mixture. Then, pour half of the banana bread batter onto the loaf pan, followed by half of the cream cheese mixture (swirl it around using a toothpick or a fork), then the remaining banana bread batter. Finally, top it with the remaining cream cheese mixture and swirl before cooking.

Ingredients
  

  • 1 and 1/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt

  • 1/4 cup salted butter melted
  • 2 pieces medium-sized, overripe bananas mashed
  • 2 pieces large-sized eggs
  • 1 teaspoon vanilla extract

Instructions
