You must try my Instant Pot Mediterranean Veggies & Israeli Couscous it is perfect for a Meatless Monday! Hey there friends, this is Jennifer from JENRON DESIGNS. Today sharing one of my favorite meatless Monday recipes Instant Pot Mediterranean Veggies & Israeli Couscous.
Are you looking for something a little bit new, different, or really fresh to eat? I know that we have been, especially since spring is starting to head our way. My Instant Pot Mediterranean Veggies & Israeli Couscous is perfect if freshness is what you seek, and it uses both the Instant Pot and Ninja Air Fryer all in one recipe.

This recipe uses a few flavors for the ingredients while keeping the entire dish completely vegetarian. We like to partake in meatless Monday at our home, just to make sure we consuming enough vegetables on a regular basis, but the recipe is so good it might just convert me.

It’s All About Fresh Produce
Fresh produce is the name of the game for this dish which is filled with loads of goodies like cherry tomatoes, spring onions, asparagus, and fresh thyme. Bold flavors that include fresh garlic and feta cheese. Then a nice amount of our texture with almond slices, and Israeli Couscous Pearls.

Once you have all your produce cleaned and prepped combine your asparagus, tomato, half of the thyme (leaves only), olive oil, seasoned salt, and pepper in a bowl and toss.

Bake in Ninja Air Fryer at 390 degrees for 12 minutes. Make sure to open and lightly toss the vegetables regularly. While this is cooking you can work on making the couscous in your Instant Pot.

For the couscous, you will want to set your Insta Pot to saute and melt 2 tbsp butter. Add your spring onions (the white parts only for now) and fresh minced garlic saute for 1 minute. Add couscous, along with the rest of the thyme leaves. Lightly toasted, 1-2 minutes. Pour the stock into Instant Pot, seal lid, and set to high-pressure cook for 6 minutes.

Carefully, quick vent, when cooking cycle is finished and fluff couscous with a slotted Spurtle. Divided into two portions and place roasted vegetables from the Air Fryer over the couscous. Then place crumbled feta cheese, sliced almonds, and green slices of the spring onions on top as garnish. I hope you enjoy this dish as much as we do!

Instant Pot Mediterranean Veggies & Israeli Couscous
Equipment
- Air Fryer
- Instant Pot 3 Qt. Mini ( can be doubled for a larger 6 Qt. Pot)
Ingredients
- 1 lb Apasargus Cleaned, Chopped into 1/2 pieces
- 8 oz Cherry Tomatoes Cleaned, Halved
- 4-5 spigs Springs Onions Cleaned, Chopped, divided into white and green portions
- 1/2 oz Thyme, fresh Cleaned, Removed from stems
- 1 cup Feta Crumbles
- 1 1/2 cups Israeli Couscous Pearls
- 2 tbsp Butter
- 1 tbsp Olive Oil
- 4 cloves Garlic Chopped (4 tbsp pre minced)
- 2 cups Vegetable Stock
- 1 oz Sliced Almonds
- 1/2 tsp Penzeys Seasoned Salt
- 1/2 tsp Pepper
Instructions
- Clean and prep all your produce
- Combine your 1/2" asparagus pieces, tomato halves, half of thyme leaves , olive oil, Penzeys Seasoned Salt, and pepper in a bowl and toss.
- Bake in Ninja Air Fryer at 390 degrees for 12 minutes. Make sure to open and lightly toss the vegetables regularly.
- Set your Instant Pot to saute and melt 1 tbsp butter, Add spring onions (white parts only) and garlic cook for 1 minute.
- Add couscous, the rest of thyme leaves and lightly toasted, 1-2 minutes.
- Pour stock into pot, seal lid and cook at high pressure cook for 6 minutes.
- Quick vent when cooking cycle is finished and fluff with a slotted Spurtle.
- Divided into two portions and top with with roasted vegetables from the Air Fryer.
- Then place crumbled feta cheese, sliced almonds and garnish with green slices of the spring onions on top.
