So I am back on the low carb, keto lifestyle. I admit I am truly a flip-flopper when it comes to eating. I do so well, then decide to sabotage myself. A lot of you can relate, right? I blame this downfall on our recent Spring break trip to Scotland and England. We were on a school band trip where we welcomed to the UK to perform not only at their music festival but also at the Fountain Abbey. It truly was an amazing experience for our family. Even though on most days our steps were 15k to 20k, I added a scone or fish fry in my mouth in between. Today I am sharing a delicious Low Carb Beef Bacon Cabbage casserole made in the Ninja Foodi.

I made a different version of my Un-stuffed cabbage bake I made a few weeks ago HERE. That recipe was so delicious and my family enjoyed it, so I came up with another version of it: Beef Bacon Cabbage casserole.

Guys love Beef Bacon Cabbage Casserole
Both my husband and son were surprised I did NOT crisp up the bacon I used in this recipe beforehand. I typically like everything burned and well done. In this case, I wanted the flavor of the bacon fat and figured the texture would blend in with the cabbage, whereas I wouldn’t even notice. I was correct in my assumption. The men of the family said this was one of their favorite dishes I have made!

Beef Bacon Cabbage Casserole in Pressure Cooker
This Beef Bacon Cabbage casserole recipe can be made in your Instant Pot/Pressure Cooker just the same, except you will NOT have the baked-on cheese with the browning effect. You can certainly melt the cheese though at the end just by placing your cheese on top and putting the lid on for a minute or two while the pot is still hot. I have no doubt it will still be delicious. Enjoy this recipe.

Low Carb Beef Bacon Cabbage Casserole
Ingredients
- 1 lb ground sirloin or beef
- (4 oz.) oz. Sour cream
- 1/2 head cabbage
- 1 tbsp. Paprika
- 1 cube Beef bouillon
- 3 strips bacon
- 7 slices Provolone cheese
Instructions
- Set pot on saute mode. Add ground beef/sirloin. Saute for just a minute. Cut bacon into 1 inch pieces, add paprika to pot along with beef and bacon. Saute all until lightly brown. Add one cup of water and cube of beef bouillon to pot.
- Let simmer for about one minute. Be sure you are not scolding the bottom.
- Add sour cream and mix well. Cut your half of cabbage head and add on top of combination. Set pot to High Pressure for 3 minutes, then do a quick release. Add cheese on top and lower crisping lid. Set to broil for 5 minutes until bubbly and brown. ENJOY! so delicious.
