On this comforting winter Sunday afternoon, I decided to make something out of my norm. It has been a while since I have had cabbage. I really enjoy cabbage and I feel it is and overlooked low carb, good for you vegetable with some essential vitamins. I can only think of one other recipe I have made with cabbage. You can check out my corned beef brisket and cabbage recipe HERE.

Un-stuffed Beef and Cabbage in the Foodi

This recipe of un-stuffed Beef and Cabbage can be made in any pressure cooker just the same method I am sharing today in the Foodi. The only difference was at the end when I topped with cheese and set on Air fry to melt the cheese on top. You can do it on the pressure cooker placing the lid on back on and setting to warm mode and your cheese will melt nicely.

This recipe is KETO approved. A lifestyle I have been incorporating for the past two months. My progress with weight loss has been a bit slower since the beginning. I do however feel better overall and will stick with it. I have cheated some here and there over the holidays. Find my KETO recipes HERE.

Un-stuffed Beef and Cabbage in the Foodi

Beef and Cabbage in Ninja Foodi

Ingredients

  • 2 lbs. Grass fed organic beef You can use any lean style of beef
  • 1 Head of cabbage
  • 1 Whole yellow onion
  • salt and pepper to taste
  • 2 tbsp. Italian seasoning
  • 2 tbsp. minced garlic
  • 1 14.5 ounce Diced canned tomatoes with juice
  • 1/2 cup water
  • Shredded cheese of choice optional

Instructions

  • First set pot on Saute mode HIGH. Add beef and be sure to brown well and break up any larger pieces. Add seasoning, onion, salt, pepper, and garlic. Continue to saute and stir consistently for about 5 minutes.
  • Chop your head of cabbage. Kick off saute mode. Place cabbage on top of beef combination. (NO NEED to drain the meat as long as it is a bit leaner and not too greasy).  Add canned tomatoes on top of cabbage. Set Foodi on High Pressure for 5 minutes. Quick release. Add shredded cheese of choice and put crisping lid down for 3 minutes on Air fryer temp 390. ENJOY!
